Of coconut sugar, Gandhi said: “The juice of the coconut tree can be transformed into a sugar as soft as honey… Nature created this product such that it could not be processed in factories. Coconut palm sugar is acquired from the flowers growing high on coconut trees, which are opened to collect their liquid flower nectar. This nectar is then evaporated to form a crystalline sugar that's light brown in color and naturally rich in a number of key vitamins, minerals and phytonutrients, including potassium, zinc, iron, and vitamins B1, B2, B3 and B6.
Remarkably, even though coconut sugar dissolves and melts just like regular sugar, it has a far superior taste. Coconut sugar adds a depth to almost any recipe. It can be used in smoothies, and raw food desserts (coconut palm sugar is not raw by the way, but neither is agave nectar or maple syrup). You can use coconut palm sugar as a replacement for regular white sugar in any recipe. You'll get improved taste, improved nutrition and a lower overall glycemic index for the finished food.
It has a glycaemic index of 35. By comparison, the GI of honey is 55 – 60. At just 35, our coconut sugar has a glycaemic index very similar to cooked carrots, and yet it's a super delicious sweetener which is low in fructose.

Due to their great ecological tolerance, the cultivation of coconut trees is highly sustainable. Coconut trees are known as a three generation crop having a lifespan of 75-80 years, able to provide for the coconut farmer, his children and eventually grandchildren.
Coconut trees help to stabilize land from erosion and increase soil fertility and water conservation. Coconut sugar production is year-round, not seasonal like cane sugar (where the plants have to be removed and re-planted each season).
